Hello!

We always know we are falling fast into the Golden Quarter when football arrives for the NFL, which is this Thursday evening, the 4th.

What is the Golden Quarter? It's the busiest and hopefully most profitable last 3 months of the year.

I have recently begun doing presales again. This week, I will be doing football-themed cookies. The inspiration photos below are what I am offering.

Your Question, My Answer

Q: What should I look for when purchasing a food dehydrator for cookies?

A: You need a dehydrator with a fan in the back that blows across all of the racks.

A hinged front door will help considerably.

Stainless steel always shows quality, whereas plastic shelves can easily break.

It is key to make sure the dehydrator you choose will go down to a 95-degree temperature. This is the ideal temp for crusting royal icing.

The round dehydrators have the fan at the bottom. This causes you to have to remove each rack and rotate them. In turn, moving the iced cookies before they dry will cause cracking. Also, because the fan is at the bottom, it gives improper circulation.

Business Sense: marketing yourself

1. One big play you can do is to keep on top of trending subjects. For instance, we recently moved to "Little Sweden" USA. It's a lovely little tourist town. It is the leading world producer/manufacturer of the Dala horses from Sweden.

In October, we will have a huge festival, Hyliningsfest. Because of this, I went over to Mike's Cookie Cutters on Etsy and had him make me 2 sizes of the Dala horse cutters. I will be hosting children's parties where they will decorate the horses. It's timely, wouldn't you agree?

2. A good way to market your business for free is to have presales. But how do you market that? Easy! Make a Facebook event. Fb likes events and promotes them well. Invite all your friends list and have them share.

Doing this helps to have a community making the buzz for you.

3. Something that can help grow your business is making labels or stickers with a QR code to your Facebook or Instagram page. Place the label on their cookie box so they can scan it with their phone to share their photos of their celebration with your cookies. People love getting 'published'. Promote this idea and you will see your business increase!


Business Tips

1. Ending up with a lot of bubbles in your royal icing? Make sure the icing is not whipped when mixing. That lets too much air in. When mixing colors, gently fold the food color gel in. Then, let it sit for a little while to let the air bubbles rise to the top.

2. When you use cornstarch/cornflower to dust the dried royal icing on cookies, dust generously with a fluffy brush and let it set for a few minutes to allow any excess moisture to soak up. Lightly brush off the cornstarch and heatseal.

3. If you've watched videos on cookiers giving tips, a common 'tip' they give is to never use flour to roll out your dough. This is obviously parroted from unlearned cookiers.

Our grandmothers always used flour! I use flour.

My cookies are ultra soft with every batch. Perhaps their cookies are on the dry side already. If you go with my recipe, you needn't worry about dry cookies. Grab my recipe if you do not have it. You will save yourself a lot of frustration and gain a lot of compliments! Best Sugar Cookie Recipe
